A single Huaniu apple — about 300 grams, deep red, picked at peak ripeness in the loess hills of Tianshui, Gansu — yields just 33 grams of our organic apple juice concentrate.
Why so little?
Because we keep what matters and remove what doesn’t. And that takes four tightly controlled stages.
The journey of one apple — in four stages
Stage 1: Sorting & Washing
Our 300g Huaniu apple arrives at the facility within 24 hours of harvest. Before it touches any equipment, it passes hand-sorting — only sound, fully ripened fruit enters the line. High-pressure spray washing removes surface residues. No chemical sanitizers. No shortcuts. This first quality gate is why we consistently achieve Patulin levels below 1 ppb — well under the EU’s 10 ppb baby food threshold. Our apple makes the cut. So do 99% of its neighbors.
Stage 2: Pressing & Enzymatic Treatment
The sorted apple enters a belt press. Not a cold press — a controlled crush-and-press system. A natural pectinase enzyme treatment breaks down the fruit’s cell walls, unlocking bound aromatic compounds and maximizing juice yield. The slurry then spins through a decanter centrifuge, separating raw juice from pulp and insoluble solids. From 300g of fresh fruit, we now have ~234g of clarified raw juice — carrying the full floral Huaniu aroma profile intact.
Stage 3: Low-Temperature Vacuum Evaporation & Ultrafiltration
Now the transformation begins. The 234g of raw juice enters a multi-effect vacuum evaporator, gently heated at ≤55°C under reduced pressure. Water is removed at approximately 7:1 concentration. But here’s the critical part: an integrated aroma recovery unit captures those delicate volatile flavor compounds mid-evaporation — and returns them to the concentrate. What you smell when you open a drum of FOGT organic concentrate is the same Huaniu fragrance you’d smell biting into the fresh apple. Not “cooked.” Not generic. Huaniu.
After concentration, the juice passes through an ultrafiltration membrane — pore size ≤0.02 μm — achieving 98.6% clarity at 625 nm. No fining agents. No chemical clarification. Just physics.
From 234g of raw juice, we arrive at 33g of 70°Brix concentrate. Enough to flavor 5,000ml of finished beverage. Everything the apple was — its sugars, acids, polyphenols, and that unmistakable floral character — is now captured in two spoonfuls.
Stage 4: Aseptic Filling & Quality Release
The 33g we’ve been tracking joins its batch — now hundreds of kilograms — for HTST (high-temperature short-time) pasteurization. Immediately filled into 275 kg aseptic drums under sterile conditions. The entire process, from apple arrival to sealed drum, is completed within 36 hours — minimizing oxidative degradation and locking in the color and flavor profile for a full 24-month shelf life.
Before any drum leaves the facility, a complete laboratory panel is run: Brix, acidity, pH, color, clarity, Patulin (HPLC), and a full microbiological screen — bacteria, coliforms, mould & yeast, TAB — all verified <1. A batch-specific Certificate of Analysis ships with every order.

Why Huaniu matters
Huaniu is not a commodity processing apple. It’s a GI-protected variety grown exclusively in the Tianshui basin at 1,000–1,600m elevation — long sunshine hours, sharp diurnal temperature swings, mineral-rich loess soil. The result: a deep crimson fruit with concentrated sweetness, high acidity balance, and an aroma profile no generic apple can match.
Together with Japanese Fuji and American Red Delicious, Huaniu is recognized as one of the world’s three great apple varieties. We press them within 48 hours of harvest. Same mountain. Same day. Same batch.
